(PIQUANT/HOT TOMATO JAM)
- 1 glass canola oil
- 20 garlic teeth
- 3 kg of peeled and cut tomatoes
- 1 full teaspoon of salt
- 1 flat teaspoon sugar
- 3 soup spoon canola oil (for cooking the peppers)
- 4 pcs spicy green paprika sliced into very thin slices
- 2 spoons spicy paprika spice
- 1 flat teaspoon of roman cumin
- Half teaspoon of curcuma
Frying the garlic in a deep pot.
When the garlic gets a light golden colour, add the tomatoes, salt and the sugar and bring it to boiling point.
Take down the fire to low and cook for another 2 hours to thickening.
Put the 3 spoons of oil into a small pan and fry the peppers. While mixing, add the spices.
Put the content of the pan to the pot , cook for another 20 mins, check thickness and cool it down.
